Palisa Anderson, daughter of late Chat Thai founder Amy Chanta, owns five Chat Thai restaurants across Sydney, including locations in Circular Quay, Chatswood, Westfield Sydney, The Galeries, and Neutral Bay. Anderson grows many of the ingredients used in her restaurants at her organic Boon Luck Farm located in the Northern Rivers region. This includes items like radicchio for salads and intensely aromatic Thai basil, which are key to their menu offerings such as a charcoal-grilled beef salad with punchy chili dressing and fragrant herb-infused spicy green curry featuring apple eggplant. The use of high-quality produce contributes to the restaurant's reputation for big flavors and excellent textures in dishes like mango with sticky rice and steamed rice dumplings.
