In late 2025, restaurateur Chris Lucas brought Melbourne's Grill Americano to Chifley Square in Sydney. Located next to the well-established Rockpool Bar & Grill, Grill Americano offers an expansive and theatrical dining experience with soaring ceilings and white marble counters where Josper grills flare up behind the counter. Despite its audacious positioning, Grill Americano has been successful, attracting diners even during midweek service. The menu features elaborate dishes like lobster agnolotti and three signature bistecche prepared in different styles, including a "pizzaiola" of tenderloin over caper-infused sugo. This expansion reflects Lucas's approach to making dinner a theatrical event, which he first implemented at his restaurant Chin Chin.
